Chicken Breast In Mustard Cream Sauce Recipe
This makes two chicken breast halves. I may eat two if I am REALLY hungry or put one away for another day!

Ingredients
  • 2 boneless chicken breast halves
  • olive oil
  • 1 to 2 tablespoons balsamic vinegar
  • 1 tablespoon white wine
  • 1/2 cup heavy cream
  • 1 tablespon Dijon mustard
  • Hot cooked egg noodles or rice

Directions
  1. In skillet, saute chicken in a litte olive oil until browned and cooked through.
  2. Remove chicken and keep warm.
  3. Pour off excess oil from pan.
  4. Over high heat, add wine and vinegar.
  5. Scraping up brown bits from bottom of skillet, heat until liquid is reduced and syrupy.
  6. Add heavy cream.
  7. Boil, stirring, until cream is thickened and reduced by half.
  8. Remove from heat.
  9. Stir in mustard.
  10. Spoon sauce over chicken and noodles or rice.
