Pumpkin Pecan Loaf

- flour no-stick spray shopping list
- 1/2 c light olive oil shopping list
- 1/2 c sugar shopping list
- 2 large eggs shopping list
- 1 c solid pack pumpkin shopping list
- 1/2 c milk shopping list
- 1-1/2 c flour shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tsp ground cinnamon shopping list
- 1 tsp ground ginger shopping list
- 1/2 c chopped pecans shopping list
- Topping: shopping list
- 1/2 c chopped pecans shopping list
- 1/4 c packed brown sugar shopping list
- 2 Tbs light olive oil shopping list
How to make it
- Heat oven to 350. Coat 9x5" loaf pan lightly with flour no-stick cooking spray.
- Stir olive oil and sugar together with spoon. Stir in eggs until blended. Add pumpkin and milk. Combine flour,baking soda,salt,cinnamon and ginger. Add to pumpkin mixture,stirring until well combined. Stir in 1/2 c pecans.
- Pour batter into prepared pa. Combine 1/2 c pecans,brown sugar and olive oil till until mixed and crumbly. Sprinkle over batter.
- Bake 55 to 60 mins or till toothpick comes out clean. Cool 10 mins. Remove from pan.
