Chicken Antonio Recipe
This recipe comes from Ferrari's Restaurant in Schenectady NY. Serve this to guests with a crisp green salad, bread and a side of pasta, a bottle of wine and enjoy!

Ingredients
  • 4 boneless chicken breast halves
  • 10 to 12 ounces fresh mushrooms, sliced
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 bunch fresh parsley, chopped
  • 1/4 cup dry white wine
  • 1/2 cup olive oil
  • 2 eggs, beaten with 2 tablespoons water
  • 1 cup all purpse flour seasoned with salt, pepper and garlic powder

Directions
  1. Gently flatten chicken to make an even thickness.
  2. In large skillet, heat oil over medium-high heat.
  3. Dredge chicken in seasoned flour and dip in egg wash.
  4. Add chicken to skillet and brown on both sides. Remove and keep warm.
  5. Drain off most of the fat from the skillet.
  6. Add mushooms to skillet and saute until mushrooms soften.
  7. Add fresh garlic and cook 1 minute.
  8. Season to taste with salt, pepper and garlic powder.
  9. Return chicken to skillet. Add wine.
  10. Cook over medium heat until wine is reduced by a third to a half.
  11. Add butter in pieces to sauce, stirring until melted.
  12. Plate chicken with mushrooms over and sprinkle with parsley.

Made this last night to rave reviews. The only change I made was a added a smidge of honey mustard to the mushroom-wine sauce. Thankyou So So Much!!!
