- 1-2 tablespoons vegetable oil shopping list
- 16 ounces boneless, skinless chicken breast, cubed shopping list
- 1 pound good smoked sausage, cut in 1-inch chunks shopping list
- 1 onion, chopped shopping list
- 1-2 bell peppers, chopped shopping list
- 3 stalks celery, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 14.5-ounce can diced tomatoes shopping list
- 1 small can tomato paste shopping list
- 1 14.5-ounce can chicken broth shopping list
- Tony Chachere's creole seasoning shopping list
- Dash of Tabasco or to taste shopping list
- Kitchen Bouquet (for color) shopping list
- 1 pound pasta, cooked according to package directions shopping list
- 1-2 chopped green onions shopping list
How to make it
- In a Dutch oven, brown chicken and sausage in vegetable oil.
- Remove from pot and set aside. Add onions, bell pepper and celery and saute until softened but not browned.
- Add garlic and cook for about 2 minutes more, stirring constantly.
- Add tomatoes, tomato paste, chicken broth, Tony's and Tabasco. Stir to incorporate. Add meat back to pot and bring to a boil.
- Reduce heat to a simmer and cook, covered for about 30 minutes or until chicken is cooked through.
- Add a dash of Kitchen Bouquet, stir and remove from heat. Add cooked pasta to the pot, along with the green onions and adjust seasonings.
- Note: This will feed a bunch of folks, but if more show up unexpectedly (as they do as such outdoor venues), just add more Tabasco to stretch the pot. Trust me on this.
