How to make it

  • In a Dutch oven, brown chicken and sausage in vegetable oil.
  • Remove from pot and set aside. Add onions, bell pepper and celery and saute until softened but not browned.
  • Add garlic and cook for about 2 minutes more, stirring constantly.
  • Add tomatoes, tomato paste, chicken broth, Tony's and Tabasco. Stir to incorporate. Add meat back to pot and bring to a boil.
  • Reduce heat to a simmer and cook, covered for about 30 minutes or until chicken is cooked through.
  • Add a dash of Kitchen Bouquet, stir and remove from heat. Add cooked pasta to the pot, along with the green onions and adjust seasonings.
  • Note: This will feed a bunch of folks, but if more show up unexpectedly (as they do as such outdoor venues), just add more Tabasco to stretch the pot. Trust me on this.
