Rich Sweet Maple Mousse Recipe


RIch  Sweet Maple Mousse Recipe
You have to use the real thing here for maple syrup not the commercial pancake syrup. We're fortunate to have some of the best maple sryup producers in Nova Scotia. Yummy!!

Ingredients
  • 1 1/4 cups maple syrup
  • 3 egg yollks
  • 1/8 tsp. salt
  • 2 cups heavy cream

Directions
  1. Heat maple syrup in top of double boiler. Carefully beat in egg yolks and salt. Cook gently 8-10 minutes until slightly thickened. Cool thoroughly.
  2. Whip cream until stiff. Fold carefuly into maple syrup mixture. Spoon into serving glasses and refrigerate at least 1 hour.
  3. Note: this can be frozed and served as ice cream.
