Lemon Poppy Seed Muffins

- 3 cups flour shopping list
- 3 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 3 Tbs poppy seeds shopping list
- 1 stick butter softened at room temperature shopping list
- 3 eggs shopping list
- 1 cup Greek yoghurt, or THICK sour cream or quark shopping list
- juice and zest of one lemon shopping list
- 3/4 cup sugar shopping list
- 1 pkt vanilla sugar ( or 1 or 2 tsp vanilla ) shopping list
- Glaze: shopping list
- juice from 1 large lemon shopping list
- 1 cup granulated sugar shopping list
How to make it
- Combine dry ingrrdients except for sugar
- Cream butter and sugar, vanilla sugar than add eggs one at a time.
- Blend in the lemon juice and zest
- Add the dry ingredients to the creamed mixture alternately with the yoghurt until everything is well mixed
- Batter should be thick
- Spoon batter into paper lined muffin tins almost to the top
- Bake 400F about 20 to 25 minutes or muffins are lt golden and tested done in center
- Cool to warm
- Brush on glaze: mix the sugar and lemon juice together.
- These are taste best when served warm
- If room temp, reheat gently in the microwave
- May be frozen
- About 12 large , more yield when using smaller muffin tins
