How to make it

  • Combine crumbs and margarine; reserve 1/2 cup for topping.
  • Press remaining crumb mixture onto the bottom of a 9-inch springform pan.
  • Combine marshmallow creme, milk and creme de menthe, mixing with electric mixer or wire whisk until well blended.
  • Fold in whipped cream.
  • Pour mixture over crust and sprinkle with reserved crumbs. Freeze.
  • **Variation: Increase milk to 1/4 cup and substitute a few drops of peppermint extract and green food coloring for the creme de menthe.

Yummers Janice - sounds good.... When I was young, my Mother would make Grasshopper pie out of vanilla ice cream and creme de menthe in an Oreo crust. It was always one of my favorites. This is much lighter and I think it would be better. I will definitely give it a try.
