Artichoke Sauce Covered Chicken Pasta Recipe


ARTICHOKE SAUCE COVERED CHICKEN PASTA Recipe
A Healthy and tasty chicken pasta dish. A great meal to have on cool fall days.

Ingredients
  • 2 tbsp olive oil
  • 1 pound chicken breasts or tenders, cut in bite sized pieces
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • salt and pepper to taste
  • 1 15-oz can artichoke quarters, rinsed, drained, and chopped
  • 1/4 cup grated Parmesan
  • 1/4 cup fresh basil, chopped
  • 1 box corkscrew pasta

Directions
  1. Cook the pasta according to directions.
  2. Heat the oil in a large skillet on medium-high.
  3. Add the chicken and cook 2-3 minutes, until browned.
  4. Add the garlic and cook another minute.
  5. Add wine, salt, pepper, and artichokes.
  6. Reduce the heat to a simmer and cook about 10-12 minutes, until the chicken is cooked through.
  7. The sauce will thicken a bit as it cooks.
  8. Turn the heat off and stir in the cheese and basil.
  9. Serve over the cooked pasta
