Ingredients
  • 4 Tbsp butter
  • 4 Tbsp four
  • 2 cups milk
  • 2 cups chicken stock
  • 3 Tbsp Dijon mustard
  • Salt and ground black pepper
  • 1 box oven-ready lasagna noodles
  • 10 oz box frozen artichoke hearts, defrosted and chopped
  • Leftover holiday ham, roughly chopped
  • 2 cups sredded Swiss cheese
  • 1/4 cup flat-leafed parsley, chopped

Directions
  1. Place a large saucepan over medium heat and melt butter.
  2. Sprinkle the flour over the butter and cook for about a minute.
  3. Whisk in milk, chicken stock and mustard, and bring the sauce up to a bubble.
  4. Season the sauce with salt and freshly ground black pepper, then simmer until thickened, 3 to 4 minutes.
  5. Assemble the lasagna by ladling about 1/2 cup of the sauce into the bottom of a 13x9-inch baking dish.
  6. Lay three of the lasagna noodles over the sauce, top with about a third of the ham and artichokes, and ladle about a cup of sauce over everything.
  7. Repeat, making two more layers of the lasagna.
  8. Top the lasagna off with the last three lasagna noodles, the remaining sauce and the shredded cheese.
  9. Cover the pan with aluminum foil and bake for 30 minutes at 375 degrees.
  10. Remove foil and bake another 15 minutes until the cheese is melted and the sauce is bubbly.
  11. Garnish with parsley and serve.
