Banana Filled French Toast Recipe
This is another treasure from my aunt's collection which I am in the process of typing up. I remember these from at least 40 years ago. Enjoy

Ingredients
  • 1 loaf unsliced French bread
  • 3 bananas
  • 1/4 cup brown sugar
  • 1/4 cup pecans
  • 3 large eggs
  • 3/4 cup cream
  • 1 tablespoon granulated sugar
  • 2 teaspoons vanilla
  • 1/4 cup butter

Directions
  1. Slice bread into pockets and do not use the ends.
  2. Start slicing the first slice all the way through loaf and the second only 3/4 of the way through.
  3. Slice the third slice all the way through and the fourth only 3/4 of the way through.
  4. Continue until all bread is sliced.
  5. Peel and slice bananas then lay bananas in pocket then stuff in a few pecans then brown sugar.
  6. Mix together eggs, milk, sugar and vanilla.
  7. Dip each French toast pocket into the egg mixture and place into skillet with melted butter.
  8. Cook and turn then serve with powdered sugar and maple syrup.
