How to make it

  • Slice bread into pockets and do not use the ends.
  • Start slicing the first slice all the way through loaf and the second only 3/4 of the way through.
  • Slice the third slice all the way through and the fourth only 3/4 of the way through.
  • Continue until all bread is sliced.
  • Peel and slice bananas then lay bananas in pocket then stuff in a few pecans then brown sugar.
  • Mix together eggs, milk, sugar and vanilla.
  • Dip each French toast pocket into the egg mixture and place into skillet with melted butter.
  • Cook and turn then serve with powdered sugar and maple syrup.
