BACON AND EGG SUPPERS

- 8 slices bacon, chopped shopping list
- 1 tbsp. vegetable oil shopping list
- 1/2 lb. zucchini, diced into 1/4 inch pieces shopping list
- 4 lg. eggs shopping list
- 1/4 c. milk shopping list
- 3/4 c. light cream shopping list
- salt and pepper to taste shopping list
- 1 tbsp. grated parmesan cheese shopping list
- 1/2 c. shredded cheddar cheese shopping list
- 1/2 c. soft white bread crumbs shopping list
How to make it
- 1. Preheat the oven to 375 degrees.
- 2. Heat the oil in a skillet; add the bacon and cook for 7 minutes until crisp. Remove the bacon with a slotted spoon and put in a bowl. Add the zucchini to the pan and cook stirring for 5 minutes until soft. Remove with slotted spoon and add to the bacon, mixing well together.
- 3. Spoon mixture into four 3/4 cup heat proof dishes, dividing it equally between them.
- 4. Beat the eggs, milk and cream together in a bowl and season to taste. Pour the mixture over the bacon and zucchini in the dishes.
- 5. Bake in the oven for 5 or 30 minutes just until the mixture is set. Do not over cook the egg mixture as it will become curdled and watery.
- 6. Preheat the broiler to moderate and mix the cheese and bread crumbs together in a bowl.
- 7. Remove the dishes from the oven, sprinkle the top with the cheese and bread crumb mixture. Broil for 3 minutes until the topping is golden. Serve at once.
