How to make it

  • Preheat oven to 450,with racks in upper and lower thirds. On two rimmed baking sheets,arrange chicken,fennel,shallots,and sage.
  • In small bowl,whisk together oil and vinegar and drizzle over chicken and vegetables.
  • Toss to combine and season with salt and pepper. Roast 35 mins,rotating sheets halfway through. Add apples to sheet and roast until fennel is browned and chicken cooked through,15-20 mins. more.

    I was introduced to fennel many years ago by an Italian green grocer. I had never tried it before and once I did, it was love at first bite ;)
