Baked Chicken With Fennel And Apples Recipe

Ingredients

3-3-1/2 lbs. chicken parts

2 fennel buklbs,fronds removed,bulbs cut in 1" wedges

4 shallots,halved lengthwise

1/2 c fresh sage leaves

3 Tbs extra virgin olive oil

2 Tbs cider vinegar

coarse salt and ground black pepper

2 Gala or Fugi apples,cored and quartered

Directions

Preheat oven to 450,with racks in upper and lower thirds. On two rimmed baking sheets,arrange chicken,fennel,shallots,and sage.

In small bowl,whisk together oil and vinegar and drizzle over chicken and vegetables.

Toss to combine and season with salt and pepper. Roast 35 mins,rotating sheets halfway through. Add apples to sheet and roast until fennel is browned and chicken cooked through,15-20 mins. more.
