How to make it

  • drain tomatoes, reserve 1/4 cup liquid
  • Combine all dry ingredients in a bowl
  • Combine butter egg, tomatoes and reserved juice in another bowl
  • Stir into dry ingrdeints just to moisten
  • Stir in 1/4 cup mozzarella cheese and 1 tbs parmesan cheese
  • Fill 6 greased jumbo muffin cups 2/3 full
  • Sprinkle with remaining cheese
  • bake 350F, 20 to 25 minutes or tested done
  • Cool 5 minutes in pan before removing
  • Yiedl 6 jumbo or more in standard size tins
  • serve warm!
