Pizza Muffins

- 1 can, 14 1/2 oz diced tomatoes shopping list
- 2 cups flour shopping list
- 3 tsp baking powder shopping list
- 1 tsp sugar shopping list
- 1 tsp dried oregano shopping list
- 1/2 tsp salt shopping list
- 1 egg shopping list
- 1/4 cup butter or margarine melted shopping list
- 1/2 cup shredded mozzarella cheese shopping list
- 2 tbs grated parmesan cheese shopping list
How to make it
- drain tomatoes, reserve 1/4 cup liquid
- Combine all dry ingredients in a bowl
- Combine butter egg, tomatoes and reserved juice in another bowl
- Stir into dry ingrdeints just to moisten
- Stir in 1/4 cup mozzarella cheese and 1 tbs parmesan cheese
- Fill 6 greased jumbo muffin cups 2/3 full
- Sprinkle with remaining cheese
- bake 350F, 20 to 25 minutes or tested done
- Cool 5 minutes in pan before removing
- Yiedl 6 jumbo or more in standard size tins
- serve warm!
