Orange Date Nut Cake

- 1 cup of unsalted butter, finest kind shopping list
- 2 cups of sugar shopping list
- 4 whole eggs shopping list
- 4 cups of flour shopping list
- 1 teaspoon of baking soda shopping list
- 1 cup of buttermilk shopping list
- 1 package of chopped dates shopping list
- 1 cup of chopped pecans shopping list
- Sauce: shopping list
- 3/4 cup of fresh orange juice shopping list
- 3/4 cup of brandy shopping list
- 2 cups of sugar shopping list
- 1 tablespoon of grated orange rind shopping list
How to make it
- Cream butter and sugar well.
- Add eggs, one at a time, beating well between additions.
- Mix 1/4 cup of flour with the dates and nuts.
- Sift remaining flour with soda.
- Add milk and flour alternately to the butter mixture.
- Add dates and nuts.
- Put waxed paper in the bottom of a large tube pan.
- Grease the sides and the paper.
- Pour in the batter.
- Bake at 350 degrees for one hour.
- While the cake is still hot, pour on your sauce and let it soak in.
- How to make the sauce:
- Heat the orange juice in small sauce pan and add the sugar, stir until the sugar dissolves completely.
- Off the heat stir in the brandy.
- Pour over the hot cake and let it cool in the pan.
- Store in air tight container to ripen.
- Mema called this a Christmas Cake and it is wonderful with a dollop of whipped cream or my cheap version of cream sauce...melted good quality vanilla ice cream.
