Fried Corn

- 9 Ears fresh corn shopping list
- 1/2 C. bacon drippings shopping list
- 1 C. Half & Half (you could use whole milk) shopping list
- salt & pepper to taste shopping list
- A Sharp Knife shopping list
- A Cast Iron Skillet (well seasoned) shopping list
How to make it
- Into a bowl:
- Run your knife down the cobs to slice off the corn (you just want the top of the corn)
- Then use the back of your knife and scrape the cob until all of the corn juice/corn mush is removed
- Into a hot cast iron skillet add the bacon drippings.
- Once the drippings are sizzling, add your corn stirring constantly so it doesn't stick or burn (you want it to get a little brown and crispy tho)
- Cook until thick (about 6-7 minutes) DON'T STOP STIRRING!
- Pour in the half &half, and salt and pepper.
- Cover and cook slow for another 10-15 minutes (you could also finish it in the oven)
- Let it cool a bit then serve! It's best to serve it straight out of the skillet so it will stay warm.
