Noodley Salmon Loaf Recipe

Ingredients

1 cup medium egg noodles

Two 7 1/2 oz cans salmon, drained

2 eggs, beaten

1/2 cup milk

1 slice white bread, crumbled

1/2 tsp minced onion

3 Tbsp chopped flat-leaf parsley

1 egg, beaten (separately from first two)

3/4 cup shredded marble cheddar

1/8 tsp alt

Optional: 2 hard cooked eggs, sliced; 1 lemon, sliced

Directions

Cook egg noodles to al dente stage; drain and set aside. Preheat oven to 350F.

In a large bowl, flake salmon, crushing bones. (Remove bones and skin if that's your preference.) Add two beaten eggs, milk, bread, onion, lemon juice and parsley; blend well.

Place half of salmon mixture in bottom of greased 9"x5" loaf pan, pressing down lightly. Blend remaining egg with cheese, salt and cooked noodles. Spoon evenly over salmon in loaf pan. Top evenly with remaining salmon mixture, spreading to edges of pan and again pressing down lightly to seal.

Bake for 30 minutes. Remove from oven and let stand 10 minutes to set. Loosen from pan and turn out onto platter. Serve immediately or let cool and refrigerate, covered, to serve cold.

Optional: Decorate with sliced eggs, lemon slices and parsley leaves.
