Ingredients
  • 1 lb Ground Beef (browned and drain the oil)
  • 1 lg can of Enchilada sauce (add half to your browed beef)
  • 1 can of Refried beans (omit if you don’t like them)
  • 1 pkg. large flour tortillas (burrito size or fit to pan)
  • 16 oz. shredded cheese (cheddar or taco blend)
  • 9x9 pan or 6x11 (spray with pam)
  • Options:
  • Lettece
  • tomatoes
  • onions
  • sour cream
  • black olives
  • salsa

Directions
  1. Pour half of your sauce in to beef and simmer for 15 to 20 min. Pour a little of the sauce on bottom of pan, then put a tortilla or tortillas on top of sauce in your pan (you want it to fit over the edges & corners) put refried beans on top of tortilla. Put the meat mixture on top of that and add a light layer of cheese. Put another layer of tortilla or tortilla’s on the top and try to put the edges of the top layer in between the pan and the bottom layer of tortillas. Pour the rest of your enchilada sauce over the top (slowly) and try to cover all of it. Put on a cookie sheet or a layer of tin foil in your oven (catches the drippings) and bake for 30 min at 350 degrees and last 15 min. cover the top with cheese and bake till melted.
  2. Add your toppings before serving or put them on the inside if you like it that way. Great reheated as a dip as well.
  3. You can double this for bigger crowds or pot luck
