shortbread cookies

This is an Anna Olson recipe. I've tried it, it's easy and delicious. Can be put in freezer and saved for Xmas.
Ingredients
- 1 cup unsalted butter at room temp shopping list
- 1/2 cup + 1 tbsp icing sugar shopping list
- 1/4 cup cornstarch or rice flour shopping list
- 1 1/2 cup all purpose flour shopping list
- 1/2 tsp salt shopping list
- 1 tsp vanilla extract shopping list
How to make it
- preheat oven to 350.
- Beat butter until light and fluffy
- sift in icing sugar and beat again until fluffy, scraping down sides of the bowl often
- Sift in cornstarch or rice flour and blend in.
- Sift in all purpose flour and salt
- mix until dough comes together. (dough will be soft)
- Stir in vanilla
- you can spoon this dough unto an ungreased cookie sheet. But I found it easier to roll the dough into a log with plastic wrap and put in the fridge until dough becomes firm, then slice to desired thickness.
- bake for 18 to 20 min or until bottoms are slightly brown.
