Shortbread Cookies Recipe
This is an Anna Olson recipe. I've tried it, it's easy and delicious. Can be put in freezer and saved for Xmas.

Ingredients
  • 1 cup unsalted butter at room temp
  • 1/2 cup + 1 tbsp icing sugar
  • 1/4 cup cornstarch or rice flour
  • 1 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Directions
  1. preheat oven to 350.
  2. Beat butter until light and fluffy
  3. sift in icing sugar and beat again until fluffy, scraping down sides of the bowl often
  4. Sift in cornstarch or rice flour and blend in.
  5. Sift in all purpose flour and salt
  6. mix until dough comes together. (dough will be soft)
  7. Stir in vanilla
  8. you can spoon this dough unto an ungreased cookie sheet. But I found it easier to roll the dough into a log with plastic wrap and put in the fridge until dough becomes firm, then slice to desired thickness.
  9. bake for 18 to 20 min or until bottoms are slightly brown.

Shortbread cookies are my favorite cookies to bake. To me other cookies are too much work and aren't much fun to make. Very nice recipe.
