How to make it

  • Preheat oven to 325
  • Grease a 2 quart casserole dish
  • Heat the oil in a large skillet over medium-high heat
  • Add celery and onion and cook until tender, about 5 minutes
  • Mix in the stuffing and parsley and remove from heat
  • Add the oysters and eggs, and season with salt and pepper, poultry seasoning and thyme
  • Stir in melted butter and enough oyster juice to moisten and mix everything thoroughly
  • Transfer to casserole dish
  • Bake about 45 minutes until top is toasted and knife inserted in center comes out clean

    All of my relatives are from Louisiana or Texas and this is the only kind of stuffing I knew existed till I was grown and gone from home. I have never had a recipe for it and am so glad you posted this. I have been telling my husband about it for year - time to make some this Thanksgiving!
