Herb Vinegars

Herb vinegars are fun, easy to make and are great holiday gifts.
Ingredients
- Heat white vinegar in a (stainless steel pan) up to boiling. Microwave works great. Pour into glass jars or clean clear wine bottles in which washed, fresh herbs are packed. Cover and let sit out of the sun for a couple of days to let the vinegar absorb the flavor. Strain the mixture thru cheesecloth into new clean containers and place fresh washed herbs. A do it yourself wine store sells corks and bottles which presents the herb vinegar nicely. shopping list

- Here are some guidelines and foods best suited for particular herbs
- Beef - garlic, chives, marjoram, oregano, savory, thyme, rosemary
- Breads - lemon basil, coriander, dill, thyme, marjoram
- Cheese- basil, garlic, chives, chervil, dill , fennel
- Eggs- basil, chervil, garlic, chives
- Fish-anise, lemon basil, garlic, dill, basil, sorrel
- Lamb-lemon basil, garlic chives, oregano, thyme
- Pork-garlic chives, sage, savory, thyme
- Poultry-basils, chives,oregano, tarragon, thyme, sage
- Salads- a basil, chives, dill, sorrel parsley is real nice
- Vegetables- basils, chervil, chives, dill, marjoram, oregano, savory, thyme
- My favorite was purple ruffels basil, garlic and chives -- enjoy

I have a rosemary shrub that I need to prune. This will be a great way to ensure the trimmings don't go to waste! I like all of the different herb combos.
