Tofu Scrambled Eggs

This was my breakfast this morning. If you camp, this is great over the fire in cast iron skillet. Both ways good with bisquits or skillet cornbread. Great with added anchovies or capers.
Ingredients
- Half package of soft tofu cut into chunks shopping list
- 2 eggs shopping list
- 1 cup julliened sweet onions shopping list
- 1 -2 slice roasted red pepper julliened shopping list
- olive oil spray or butter spray shopping list
- salt shopping list
- white pepper shopping list
- pinch chili powder or as much as you want shopping list
- OPTIONAL: anchovies or capers shopping list
How to make it
- I made this on my counter-top 'griddle'
- spray liberally with your choice of the sprays
- sweat onions and peppers
- add tofu I like to get mine a little brown but stir til mixed
- choice: either scramble your eggs before
- or crack onto grill and mix them there
- season when done
- Old fogie tip:( that means you can take it or leave it)
- Unplug grill before eggs are done and they will finish cooking with the heat off'. Season at the end with salt pepper and chili.
