Hot Diced Pork Hunan

- 1/2 lb. pork, diced shopping list
- Marinade: shopping list
- 1 egg white shopping list
- 1 T. each: sherry and cornstarch shopping list
- Dish: shopping list
- 2 c. oil shopping list
- 1 c. diced bamboo shoots shopping list
- 2 green onions, minced shopping list
- 1 fresh hot pepper, chopped (about the same size as the pork and bamboo shoots) shopping list
- 2 quarter-size pieces ginger, minced shopping list
- 1/4 t. salt shopping list
- 1 T. fermented black beans (rinse them first!) shopping list
- 1 T. sherry shopping list
- 2 T. dark soy sauce shopping list
- 1 t. black vinegar shopping list
- 1/2 T. each: cornstarch and water, mixed together shopping list
- sesame oil shopping list
How to make it
- Mix the pork with the marinade, and let it sit for at least 30 minutes. Add the oil to a work over high heat, and when the oil is smoking hot, add the pork and stir. Cook about one minute, until done, then remove. Reserve about 1 T. oil in the wok.
- Add the ginger, salt, and black beans to the hot oil and mash around for a few seconds. Add the green onion, pepper, and bamboo shoots and flip in the hot oil for about a minute. Add the pork, mix well, then the sherry, soy, vinegar, and cornstarch mixture, and stir just until the sauce is thickened. Drizzle with a little sesame oil and serve.
