Hot Diced Pork Hunan Recipe
I got this recipe from an exchange student back in the 80s. This recipe calls for fresh hot peppers. You can use Hungarian wax peppers, jalapenos, or a combination.

Ingredients
  • 1/2 lb. pork, diced
  • Marinade:
  • 1 egg white
  • 1 T. each: sherry and cornstarch
  • Dish:
  • 2 c. oil
  • 1 c. diced bamboo shoots
  • 2 green onions, minced
  • 1 fresh hot pepper, chopped (about the same size as the pork and bamboo shoots)
  • 2 quarter-size pieces ginger, minced
  • 1/4 t. salt
  • 1 T. fermented black beans (rinse them first!)
  • 1 T. sherry
  • 2 T. dark soy sauce
  • 1 t. black vinegar
  • 1/2 T. each: cornstarch and water, mixed together
  • sesame oil

Directions
  1. Mix the pork with the marinade, and let it sit for at least 30 minutes. Add the oil to a work over high heat, and when the oil is smoking hot, add the pork and stir. Cook about one minute, until done, then remove. Reserve about 1 T. oil in the wok.
  2. Add the ginger, salt, and black beans to the hot oil and mash around for a few seconds. Add the green onion, pepper, and bamboo shoots and flip in the hot oil for about a minute. Add the pork, mix well, then the sherry, soy, vinegar, and cornstarch mixture, and stir just until the sauce is thickened. Drizzle with a little sesame oil and serve.
