How to make it

  • Mix the pork with the marinade, and let it sit for at least 30 minutes. Add the oil to a work over high heat, and when the oil is smoking hot, add the pork and stir. Cook about one minute, until done, then remove. Reserve about 1 T. oil in the wok.
  • Add the ginger, salt, and black beans to the hot oil and mash around for a few seconds. Add the green onion, pepper, and bamboo shoots and flip in the hot oil for about a minute. Add the pork, mix well, then the sherry, soy, vinegar, and cornstarch mixture, and stir just until the sauce is thickened. Drizzle with a little sesame oil and serve.

    Sounds quite good and reasonably authentic. I would suggest, for those who can find it, that they use Shaoxing cooking wine, as sherry is typically a western substitution for that ingredient.
