Curried Pumpkin Soup

- 1. 1 large sweet onion (see note) shopping list
- 2. 1 Tbsp olive oil shopping list
- 3. 1 Tbsp minced garlic shopping list
- 4. 1 Tbsp grounded ginger (see note) shopping list
- 5. 1 Tbsp curry powder shopping list
- 6. 1/8 tsp red pepper flakes ( see note) shopping list
- 7. 1 tsp ground cumin (see note) shopping list
- 8. 1 can (15oz) plain pumpkin shopping list
- 9. 1 can (15oz) pumpkin pie filling shopping list
- 10. 1 cup water shopping list
- 11. 1 (32oz) container low-sodium fat-free chicken broth shopping list
- 12. 1 (13.5oz) can lite coconut milk shopping list
- 13. 2 Tbsp lime juice (fresh or bottled) shopping list
- 14. 2 ½ tsp salt shopping list
- 15. sour cream and/or fresh chives (see note) shopping list
How to make it
- Instructions:
- In a Dutch oven (big pot) heat the olive oil and slightly caramelize the onions. Don’t over do it, about 20 minutes, just bring out the caramel taste and leave juicy . Deglaze with a little chicken broth if needed and add ingredients 3-7 and sauté 1 minute. Add pumpkin, water, chicken broth and bring to a boil. Reduce heat to medium and stir in coconut milk, lime juice, salt and simmer 25 minutes stir often. Remove from heat and let cool so you don’t burn your fingers while processing.
- Process in small batches in a blender until smooth. I put each processed batch into my crock pot to keep it warm and serve it from there. Generally I’m going to a party so the crock pot works well. I bring little paper cups to serve. It seems to taste a little better heated up the next day.
- Notes:
- #1 Sweet, tender, and fresh is the key. I like white more than yellow or Vidalia.
- #4 I prefer ground, fresh ginger seemed to be a bit overpowering.
- #6 I don’t grind the red pepper flakes. That way it keeps the heat and pumpkin separate.
- #7 You do need to grind cumin seed into fine powder. It works better than ground cumin off the shelf.
- #8-9 I found 1 can of plain pumpkin and one of spicy is just right otherwise it taste too much like pumpkin pie or not enough like pumpkin.
- #15 I don’t garnish, it seems to take away from the pumpkin. The soup is an orchestra of the ingredients. Except for the salt and water, each ingredient needs to be heard in its own.

Pumpkins we got by the acre & I've run out of new ways to fix them. This looks good, I keep forgetting about soup. Soup doesn't come to mind here like it does when there is snow on the ground. A votra Sante (good health)
