How to make it

  • Peel peaches by lowering in to boiling water 30-60 seconds. Transfer to ice water and cool, remove skin. Cut peaches in half and remove seeds. Mix 2-1/2 cup water,vinegar, sugars cinnamon ,ginger root and red pepper flakes, salt , mustard seed, cloves, onion and red pepper strips and heat Add peaches reduce heat and simmer 5 min.
  • Set in hot jars, cover with liquid and cover refrigerate.
