Sweet-Hot Pickled Peaches

- 6 lbs peaches (18) shopping list
- 2-1/2 cups water shopping list
- 2-1/2 cups vinegar shopping list
- 4 cups sugar shopping list
- 3 cups brown sugar shopping list
- 4 sticks of cinnamon shopping list
- 2-4" piece of fresh ginger root in strips shopping list
- 1-1/2 tsp crushed red pepper shopping list
- 1 tsp mustard seed shopping list
- 8 whole cloves shopping list
- 1 small sweet onion cut in wedges shopping list
- 1 medium red sweet pepper , seeded and cut in strips shopping list
How to make it
- Peel peaches by lowering in to boiling water 30-60 seconds. Transfer to ice water and cool, remove skin. Cut peaches in half and remove seeds. Mix 2-1/2 cup water,vinegar, sugars cinnamon ,ginger root and red pepper flakes, salt , mustard seed, cloves, onion and red pepper strips and heat Add peaches reduce heat and simmer 5 min.
- Set in hot jars, cover with liquid and cover refrigerate.
