- 3 tbsp lemon juice shopping list
- 1 cup natural yogurt (plain) i prefer fat free shopping list
- tsp salt ( i dont add this ) shopping list
- 2 garlic cloves, crushed shopping list
- 1" piece fresh root ginger, finely grated shopping list
- 2lb lamb fillets, cubed (or chicken) shopping list
- 4 tbsp vegetable oil shopping list
- 1/2 tsp cumin seeds shopping list
- 2 bay leaves shopping list
- 4 green cardamom pods shopping list
- 1 onion, finely chopped shopping list
- 2 tsp ground coriander shopping list
- 2 tsp ground cumin shopping list
- 1 tsp chilli powder shopping list
- 14oz tin chopped tomatoes shopping list
- 2 tbsp tomato puree (paste) shopping list
- 1/4 pint water shopping list
- plain boiled rice to serve shopping list
How to make it
- In a large bowl,mix together the lemon juice, yogurt,salt,one crushed garlic clove, and the ginger,Add the lamb and marinade in the fridge overnight,
- Heat the oil in a large pan and fry the cumin seeds for 2 minutes until they splutter, Add the bay leaves and cardamon pods and fry for 2 minutes
- Add the onion and remaining garlic and fry for 5 minutes,add the coriander, cunin and chilli powder, fry for 2 minutes,
- Add the marinated lamb to the pan and cook for a further 5 minutes, stirring accasionallyu to prevent the mixture from sticking to the pan,
- Add the tomatoes, tomato puree and water, cover and simmer for 1-1,1/2 hours, cook for less time if using chicken,
- serve on a bed of rice.
