Incredible salmon dish that is so full of wonderful tastes. I have also made this with Cheddar Cheese and Havarti Cheese but my favorite is the Swiss. Enjoy

Ingredients
  • 2 salmon fillets cooked
  • 2 eggs hard boiled peeled and chopped
  • 1/2 teaspoon chopped garlic
  • 1/4 cup tartar sauce
  • 1/4 cup plus 2 tablespoons mayonnaise divided
  • 4 slices rye bread
  • 2 roma tomatoes sliced
  • 4 slices swiss cheese

Directions
  1. Preheat oven to broil. In a medium bowl crumble salmon. Add eggs, garlic, tartar sauce and 1/4 cup of the mayonnaise. Mix thoroughly and lightly season with salt and pepper. Spread remaining 2 tablespoons mayonnaise on the 4 slices of bread then lay them on a baking sheet. Evenly distribute salmon mixture onto the bread slices. Place 3 slices of tomato on each piece of bread followed by 1 slice of cheese then cut into 2 triangles. Place under preheated broiler for 3 minutes. Serve immediately.
