Mexican Pumpkin Bisque

- 2 cups chicken broth, canned is fine shopping list
- 1 pound plain pumpkin puree ( canned ) shopping list
- 2 tsp pumpkin pie spice shopping list
- 1 cup non fat or low fat Greek yoghurt shopping list
- 2 tbs apple cider vinegar shopping list
- 2 Tbs honey shopping list
- salt and pepper to taste shopping list
- 2 Tbs pumpkin seeds toasted and sprinked with cumin for garnish shopping list
How to make it
- bring broth to a boil and whisk in pumpkin puree and spice
- Let soup simmer to meld flavors about 10 minutres
- Turn off heat and whisk in vinegar, honey and Greek Yoghurt
- Season and garnish with toasted cumin flavored pumkin seeds

Love the use of Greek Yogurt in today's recipes. Greek yogurt is one of my favorite ingredients...in fact, I have it for breakfast with fresh berries every morning.
