Black Bean Quesadillas

- 4 large tortillas (or however many you want, really, recipe is easily expanded) shopping list
- ~black bean mixture~ shopping list
- 1 small can or 15 ounces cooked black beans shopping list
- 1 TBSP cumin shopping list
- 1/2 tsp garlic powder shopping list
- 1/2 tsp salt shopping list
- 1 tsp Adobo shopping list
- ~ avocado mixture ~ shopping list
- 2 avocados shopping list
- 1 tbsp olive oil shopping list
- 2 garlic cloves , chopped shopping list
- 1/3 cup diced sweet onion shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp black pepper shopping list
- 1/2 cup diced tomatoes shopping list
- 1 tbsp chopped jalepenos (without seeds) shopping list
- 1/4 cup corn kernels (frozen, can, or fresh) shopping list
- ~ remaining filler ~ shopping list
- 1/2 cup feta cheese shopping list
- 1 1/2 cup shredded mozzarella shopping list
- 1/2 cup shredded cheddar (optional) shopping list
How to make it
- Mash black beans (i use a morter) until there are no individual beans, and the mixture holds together and is spreadable with a knife (you can add a tbsp or 2 of water, but i don't)
- In a small bowl, mix mashed beans, and spices (cumin, salt, garlic powder, adobo)
- In a small pan, heat olive oil on med high heat. add garlic, onions, corn and jalepenos and cook until onions are limp and turn transparent. if garlic or onions begin to turn brown turn off heat, browning is not wanted.
- Next, mash avocado (i use a morter, but alternatively, you could use a food processor or blender). Once mashed or mixed to a paste, add salt, pepper, onion,garlic, corn and jalepeno mixture, and diced tomatoes. mix with spoon (do not blend or use electric mixer)
- lay the tortillas out flat, and on half the tortillas (mentally divide them down the center) spread the black bean mixture about 1/2 cm thick. next, add a layer of avocado mixture about the same or less thickness of the beans. sprinkle the motzzarella evenly across the avocado layer, (not too thickly) then sparingly sprinkle the cheddar, than finally crumble feta cheese on top (i also do the feta sparingly, but if you are a feta lover it tastes just as good to add more )
- In a large skillet, heat 3-4 tbsp canola oil or butter on med or med low heat ( a lower heat allows the cheese a longer time to melt before the tortilla is finished cooking)
- fold tortillas closed , and place them in the preheated skillet. Cover skillet with a pan cover (i also will just put pressure on my quesadillas with my spatula) and let fry about 2 -4 minutes (depending on pan heat, check bottom frequently - without flipping-) when bottom of tortilla is golden brown and flakey, flip and do the same to the other side.
- serve immediately with salsa and or sour cream!
