How to make it

  • Break the egg into a bowl, add the lemon juice and water and lightly whisk
  • in another bowl, sieve the flour and spices together, then stir in salt,
  • make a well in the middle of the flour mix, pour in the egg mixture,
  • using a fork, gradually mix together to form a thick batter, leave to stand for 10-15 minutes
  • heat the oil in a deep fryer until it reaches 170c/ 325f
  • stir the onions into the batter, ( i prefer to leave the onions mixed in the batter over night in the fridge)
  • lower a rounded tablespoon of the mixture carefully into the hot oil and cook for approx 4 minutes, turning the bhajis frequently with a slotted metal spoon
  • remove from the oil and drain on kitchen paper,
  • meanwhile
  • place all the raita ingredients into a bowl,mix to combine
  • serve the bhajis with a wedge of lemon and the raita dip
