Onion Bhajis With Cucumber Raita Dip

- 1 large egg shopping list
- 1 tbsp lemon juice shopping list
- 8 tbsp cold water shopping list
- 6oz plain flour shopping list
- 1 tsp ground cumin shopping list
- 1/2 tsp turmeric shopping list
- 11/2-2 tsp chilli powder shopping list
- 1 tsp garam masala shopping list
- 11/2 tsp salt shopping list
- 6oz onions, finely chopped shopping list
- lemon wedges shopping list
- cucumber raita ingredients shopping list
- 1/4 cucumber, deseeded and finely chopped shopping list
- 5oz low fat natural yogurt shopping list
- 3/4oz pack of fresh mint, roughly chopped shopping list
- pinch of cumin shopping list
How to make it
- Break the egg into a bowl, add the lemon juice and water and lightly whisk
- in another bowl, sieve the flour and spices together, then stir in salt,
- make a well in the middle of the flour mix, pour in the egg mixture,
- using a fork, gradually mix together to form a thick batter, leave to stand for 10-15 minutes
- heat the oil in a deep fryer until it reaches 170c/ 325f
- stir the onions into the batter, ( i prefer to leave the onions mixed in the batter over night in the fridge)
- lower a rounded tablespoon of the mixture carefully into the hot oil and cook for approx 4 minutes, turning the bhajis frequently with a slotted metal spoon
- remove from the oil and drain on kitchen paper,
- meanwhile
- place all the raita ingredients into a bowl,mix to combine
- serve the bhajis with a wedge of lemon and the raita dip
