Chicken with Cider and Bacon Sauce

- 4 (60z) boneless,skinless chicken breast halves shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 2 bacon slices,chopped shopping list
- 1/4 c minced fresh onion shopping list
- 3/4 c unsweetened apple cider shopping list
- 1/2 c chicken broth shopping list
How to make it
- Place each chicken breast between 2 sheets of heavy-duty plastic wrap and pound to 1/2" thickness. Sprinkle with salt and pepper.
- Cook bacon in a large nonstick skillet over medium heat till crisp. Remove bacon from the pan. Add chicken to drippings in pan;cook 6 mins on each side or till done. Remove chicken from pan;keep warm.
- Add onion to pan;saute 2 mins or till tender,stirring constantly. Add cider and broth;brong to a boil,scraping pan to loosen browned bits. Cook till broth mixture is reduced to 1/2 c (about 5 mins). Stir in cooked bacon;serve sauce over chicken.
