Spinach Gnocchi

- 1 10-oz. package chopped spinach, defrosted and undrained shopping list
- 1 cup flour shopping list
- 1 cup Italian-seasoned breadcrumbs shopping list
- 1 egg shopping list
- 1/2 cup parmesan cheese, grated shopping list
- 1/4 tsp. salt shopping list
- onion Sauce: shopping list
- 1 cup chopped onion shopping list
- 1 stick butter shopping list
- grated Parmesan shopping list
How to make it
- Mix together first six ingredients in food processor, if available.
- If not, mix with a standard or hand mixer.
- Form into a large ball, take off about 1/4 cup and roll on a well-floured board into the shape of a pretzel log.
- Slice diagonally in one-inch sections.
- Place on parchment paper-lined cookie sheet.
- Repeat until all of the spinach mixture is cut into one-inch sections.
- Brown chopped onions in butter.
- While onions are browning, place water in a three-quart saucepan.
- When the water starts to boil, add gnocchi.
- When the gnocchi float, they're done.
- Drain well
- Place gnocchi on a serving platter, sprinkle liberally with grated Parmesan cheese and then spoon browned onions on top.
- Serve warm.
- The gnocchi can be prepared ahead of time and frozen.
- No need to defrost before placing in boiling water.
- Make the browned onion sauce while the gnocchi is cooking.
