Southern Vegetable Pie

- 1 large onion, very coarsely chopped shopping list
- 2 zucchinis, sliced shopping list
- 2 yellow squash, sliced shopping list
- 1 large bell pepper, sliced in large pieces shopping list
- 1/2 stick butter shopping list
- salt and pepper to taste shopping list
- 2 cloves garlic, minced shopping list
- 1 cup mayonnaise shopping list
- 1 cup mozzarella cheese, grated shopping list
- 1 9 or 10 inch unbaked pie shell shopping list
How to make it
- Saute vegetables, seasonings, and garlic in butter (you want these still crisp not soft)
- Drain these really well. (very important)
- Add drained veggies to pie crust.
- Combine mayonnaise and cheese together; spread this over veggies.
- Bake uncovered for one hour at 350 degrees.
