TURKEY STIR-FRY 2

- Ingredients: shopping list
- 1 ½ pounds boneless turkey breast halves, cut into strips shopping list
- 1 Tbs. canola oil shopping list
- 1 small onion, chopped shopping list
- 1 carrot, julienned shopping list
- ½ medium green pepper, sliced shopping list
- 2 cups fresh mushrooms, sliced shopping list
- 1 cup chicken broth reduced-sodium shopping list
- 3 Tbs. cornstarch shopping list
- 3 Tbs. soy sauce reduced-sodium shopping list
- ½ tsp. ground ginger shopping list
- 2 cups pea pods, trimmed shopping list
- cooked rice, Optional shopping list
- 1/3 cup cashews no salt, optional shopping list
How to make it
- In a large skillet or wok, stir-fry turkey in oil over medium-high heat until no longer pink, about 5 – 6 minutes. Remove turkey and keep warm. Stir-fry the onion, carrots, green pepper and mushrooms until crisp-tender, about 5 minutes. In a small bowl, combine chicken broth, cornstarch, soy sauce and ginger. Add to the skillet; cook and stir until thickened and bubbly.
- Return turkey to skillet with pea pods; cook and stir until heated through. If desired, serve over rice with cashews.
