Lazy Day Cake

Can be used for a strawberry shortcake base, minus frosting or frosted with fudge frosting, if you don't like toasted coconut.
Ingredients
- 2 large eggs shopping list
- 1 cup sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cup all purpose flour sifted shopping list
- 1//2 tsp of salt shopping list
- 1/2 tsp of baking powder shopping list
- 1/2 cup milk shopping list
- 1 tbsp of butter shopping list
- icing: shopping list
- 3 tbsp of butter melted shopping list
- 5 tbsp of dark brown sugar shopping list
- 2 tbsp of cream shopping list
- 1/2 cup of shredded coconut shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease an 8 inch square baking pan and set aside.
- In a large mixing bowl, beat the eggs, gradually add the sugar and vanilla.
- Sift together the flour, salt and baking powder.
- Add to egg-sugar mixture, beat well.
- Heat the milk and butter in a saucepan and bring to a boil.
- Add all at once to the previous mixture.
- Beat well. Warning batter will be thin.
- Pour into prepared pan.
- Bake 30 minutes.
- Prepare Icing.
- Combine icing ingredients and mix well.
- Remove from oven, and while hot, spread icing over the cake .
- Place under broiler unitl bubbly and lightly browned.
- Cool on a rack.
