Cinnamon-Apricot Glazed Salmon

- 2 tbl low sodium soy sauce shopping list
- 1 tbl minced fresh peeled ginger shopping list
- 2 (3inch) cinnamon sticks shopping list
- 1 12 oz can apricot nectar shopping list
- 4 6oz salmon fillets about 1 inch thick shopping list
How to make it
- combine the first 4 ingredients in a saucepan and bring to a boil
- reduce heat and simmer mix until reduced to 3/4 cup (about 30 minutes)
- strain the apricot mixture thru a sieve over a bowl and discard solids
- preheat broiler
- place salmon fillets on a broiler pan lined with foil and broil for 5 minutes
- brush fish with 1/4 cup apricot mixture
- broil for 3 minutes or until lightly brown and fish flakes easily when tested with a fork
- serve the fish with the remaining mixture
