How to make it

  • Rub pig with smoke essence and let stand for 60min, be very carefull with smoke essence too much will make meat bitter
  • Mix all ingrediants of marinade together and let stand overnight
  • Fix pig on spit and inject all over with marinade
  • Baste every hour with marinade until done
  • 10min Before carving glaze with apricot jam

All thick pieces back, hind quarter etc.   Close
Fix on to spit   Close
Start BBQ   Close
Midway   Close

    I doubt that I will ever get an opportunity to try this recipe, but it sounds excellent. The only 'wild boar' in this neck of the woods is located in Ottawa and they call it the Government of Canada. They frown on hunting there, but Gawd only knows why. I may do my best to adjust this recipe to camp cook some local pork roast. Thanks again for sharing, my kudos, and a Hi-5 from the old prof.
