Country Scalloped Taters And Ham

- 7-8 medium potatoes peeled shopping list
- 4 green onions, trimmed/cleaned shopping list
- 3 cups chopped smoked ham pieces shopping list
- 2 cups milk shopping list
- 2 cups cubed Velveeta shopping list
- 1/4 cup all-purpose flour shopping list
- 1/4 cup butter shopping list
- 1 cup shredded cheese (your choice) shopping list
- salt & pepper shopping list
How to make it
- Slice potatoes into 1/8 inch rounds, place into medium pot
- and boil about 3-4 minutes, until semi-tender. Drain. Set aside.
- Slice green onions finely, set aside.
- In a small pot, over med-high heat, melt butter together with
- flour, stirring until melted and smooth. Allow mixture to cook
- while stirring, for about 1-2 minutes, until flour is cooked
- and light yellow.
- Add 2 cups milk, 2 cups Velveeta to flour mixture. Stir until
- cheese is melted and the sauce thickens slightly. Remove from
- heat immediately---do not let mixture boil.
- Spray 13x9 casserole dish with cooking spray. Layer 1/2 potatoes
- into dish, spreading evenly. Sprinkle with 1/2 green onions, then
- with 1 cup shredded cheese. Salt and pepper well. Sprinkle 1/2
- ham over potatoes.
- Repeat the above procedure with the rest of the ingredients. You
- will not have shredded cheese on the top.
- Pour the cheese sauce over the potatoes/ham mixture, smooth out
- the top of the whole thing well, so that most of the potatoes &
- ham are under the sauce.
- Salt & pepper well again, and place into a 350 oven for 45 minutes
- or until lightly browned and bubbly on top. Remove from oven and let
- stand at least 10 minutes before serving.
- Enjoy!
- NOTE: May prepare in two separate 8 inch casserole dishes (for
- smaller servings), cover tightly with PressNSeal and a
- lid and freeze for up to 4 months. To reheat, remove from
- freezer 24 hours ahead of prep, add 3/4 cup milk to the top
- and bake as directed. Pre-made foods tend to lose moisture
- in the freezer---hence the need to add the milk when you reheat.
- NOTE: May substitute COUNTRY HAM by rinsing the ham well with warm water before chopping, and leaving out the salt in the recipe
- as stated above.
