How to make it

  • Place pistachios, basil and garlic clove in food processor and process until finely chopped.
  • Add butter and lime juice then process until incorporated then season with salt and pepper.
  • Transfer butter mixture to small bowl and refrigerate until well chilled.
  • Preheat oven to 400 then butter a rectangular baking dish.
  • Place salmon fillets in baking dish in a single layer and pour wine over top.
  • Season salmon with desired amount of salt and pepper then bake 10 minutes.
  • Place 2 tablespoons pistachio butter atop each salmon piece and continue baking 5 minutes.
  • Garnish with basil if desired and serve immediately.
