Salmon with Pistachio Basil Butter

- 1/4 cup pistachios shopping list
- 10 large fresh basil leaves shopping list
- 1 garlic clove shopping list
- 1/2 cup butter at room temperature shopping list
- 1 teaspoon lime juice shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 6 salmon fillets shopping list
- 1/2 cup dry white wine shopping list
- Additional fresh basil leaves for garnish shopping list
How to make it
- Place pistachios, basil and garlic clove in food processor and process until finely chopped.
- Add butter and lime juice then process until incorporated then season with salt and pepper.
- Transfer butter mixture to small bowl and refrigerate until well chilled.
- Preheat oven to 400 then butter a rectangular baking dish.
- Place salmon fillets in baking dish in a single layer and pour wine over top.
- Season salmon with desired amount of salt and pepper then bake 10 minutes.
- Place 2 tablespoons pistachio butter atop each salmon piece and continue baking 5 minutes.
- Garnish with basil if desired and serve immediately.
