How to make it

  • Instructions:
  • Preheat oven to 375 degrees F.
  • Grease a 9 inch square pan.
  • In a medium sized saucepan, bring the water, raisins, sugar, butter, spices and salt to a boil.
  • Simmer uncovered for 3 minutes. Let cool.
  • Sift together the flour, baking powder, and baking soda.
  • Stir in the raisin mixture and nuts.
  • Beat until smooth.
  • Pour into the baking dish and bake for 35 to 40 minutes.
  • Cool in pan for 15 minutes.
  • Turn out of pan and cool completely.
  • Variations if tolerated:
  • Substitute an equal amount of milk for the water.
  • Substitute 2 cups of wheat flour for the rice flour.
  • Add 1 egg to the cooled raisin-butter mixture.
