Fruity allergy friendly Spice cake

- 1 cup water shopping list
- 2 cups raisins shopping list
- 1 cup maple sugar or sugar shopping list
- 1/2 cup butter or margarine shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/2 teaspoon allspice shopping list
- 1/2 teaspoon sea salt shopping list
- 1 1/2 cups potato starch or rice flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 cup chopped pecans (optional) shopping list
How to make it
- Instructions:
- Preheat oven to 375 degrees F.
- Grease a 9 inch square pan.
- In a medium sized saucepan, bring the water, raisins, sugar, butter, spices and salt to a boil.
- Simmer uncovered for 3 minutes. Let cool.
- Sift together the flour, baking powder, and baking soda.
- Stir in the raisin mixture and nuts.
- Beat until smooth.
- Pour into the baking dish and bake for 35 to 40 minutes.
- Cool in pan for 15 minutes.
- Turn out of pan and cool completely.
- Variations if tolerated:
- Substitute an equal amount of milk for the water.
- Substitute 2 cups of wheat flour for the rice flour.
- Add 1 egg to the cooled raisin-butter mixture.
