Apple Gingerbread

- Ingredients: shopping list
- 2/3 cup sugar shopping list
- 1/3 cup un-sweetened applesauce shopping list
- 1 egg shopping list
- 3 Tbs. molasses shopping list
- 1 cup all-purpose flour shopping list
- ½ cup whole wheat flour shopping list
- 2 tsp. ground ginger shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. ground cinnamon shopping list
- ¼ tsp. ground nutmeg shopping list
- 1/8 tsp. ground allspice shopping list
- ½ cup reduced-fat plain yogurt shopping list
- 1 ½ cups chopped peeled Granny smith or other tart apples ( about I medium ) shopping list
- 1 cup plus 2 tablespoons reduced-fat whipped topping shopping list
How to make it
- Preheat oven at 350.
- In a mixing bowl, combine the sugar, applesauce, egg and molasses; mix well. Combine the flours, ginger, baking powder, baking soda and spices; add to the molasses mixture alternately with yogurt, beating just until combined. Fold in the apples.
- Pour into an 8-inch square baking dish coated with non-stick cooking spray. Bake at 350 for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into squares; dollop with whipped topping. Yield: 9 servings.
