Lemon Blossoms

- 1 18-1/2 oz. package yellow cake mix shopping list
- 1 3-1/2 oz. package instant lemon pudding mix shopping list
- 4 eggs shopping list
- 3/4 cup vegetable oil shopping list
- Glaze: shopping list
- 4 cups confectioners sugar shopping list
- 1/3 cup fresh lemon juice shopping list
- Grated zest of one lemon shopping list
- 3 tble. vegetable oil shopping list
- 3 tble. water shopping list
How to make it
- Preheat oven to 350. Coat miniature muffin pans with non-stick cooking spray.
- In large bowl, combine cake mix, pudding mix, eggs, and oil and blend with electric mixer for 2 minutes. Spoon 1 tablespoon batter into each muffin cup. Bake for 12 minutes. Turn them out of the pan.
- To prepare glaze, sift confectioners sugar into medium bowl. Add lemon juice, zest, oil, and water and mix until smooth. Dip cupcakes into glaze while cupcakes are still warm, covering as much of the cake as possible. Place them on wire racks with wax paper underneath to catch the drips. Let glaze set thoroughly.
