Tropically Spicy Banana Bread

Heat Wave!: The Best of Chile Pepper Magazine Edited by Dave DeWitt and Nancy Gerlach. Serve with cinnamon coffee or a scoop of coconut ice cream. Makes 1 loaf.
Ingredients
- 2 cups all-purpose flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 3 tbs candied tamarind shopping list
- 2 tbs candied ginger shopping list
- 1 tsp lime zest shopping list
- 1 1/2 tsp orange zest shopping list
- 1 stick butter, softened shopping list
- 1/4 cup brown sugar shopping list
- 1/2 cup white sugar shopping list
- 2 eggs, beaten shopping list
- 1 1/4 cups mashed ripe bananas shopping list
- 1/4 cup orange juice shopping list
- 1/2 tsp vanilla shopping list
- 1/2 tsp ground cinnamon shopping list
- 1/2 tsp ground allspice shopping list
- 3 tbs peppered tequila shopping list
- 1/2 cup chopped walnuts shopping list
How to make it
- Preheat oven to 350 degrees.
- Sift together the dry ingredients and set aside. Combine the candied fruits and mix with the lime and orange zest.
- Cream the butter and the two sugars together and stir in the eggs. Add the bananas, orange juice, vanilla, cinnamon, allspice and tequila. Stir in the dry ingredients by hand, only enough to moisten all ingredients. Add the candied fruit mixture and nuts.
- Pour into a greased loaf pan and bake for 50 to 60 minutes until golden brown.
