How to make it

  • Sprinkle chicken breasts on both sides with taco seasoning.
  • Heat oil in large skillet over medium high heat then add chicken and reduce heat to low.
  • Sauté chicken until well browned on both sides and cooked through about 15 minutes.
  • Meanwhile chop one avocado and cut remaining avocado into 16 slices and set aside.
  • Remove chicken from skillet then slice and keep warm.
  • Add salsa to skillet then cook over low heat until hot and stir in reserved chopped avocado.
  • On 4 plates arrange chicken fanning the slices then top with avocado salsa dividing evenly.
  • Garnish with reserved avocado slices and if desired cilantro sprigs then serve immediately.
