Feta Filled Arepas-corn cakes

- 4 cups masa harina ( found in ethnic/ hispanic food sections ) shopping list
- 1 tsp baking powder shopping list
- 1/2 cup vegetable oil shopping list
- 3 cups cool water shopping list
- 1 1/2 cups crumbled feta cheese shopping list
- addtional oil shopping list
How to make it
- In a large bowl mix the masa harina, baking powder, oil and cool water
- Kneads dough several times and wrap in plastic
- Divide dough into 16 pieces
- Faltten each into a 3 inch disc
- Sprinkle feta over 8 dsics
- Top with remaining discs and seal to enclose cheese and shape into patties
- Heat 1/4 inch of oil in skillet and cook arepas med high heat, turning once until golden about 6 to 7 minutes
- Drain on paper toweling and serve
