How to make it

  • Combine the sugar, oil, egg and vanilla.
  • Beat until well blended and then stir in the buttermilk and rhubarb.
  • Add the dry ingredients and stir until just moistened - don't overmix or you will get tunnels in the muffins and sharp pointed tops on them.
  • Fill greased or lined muffin tins 2/3 full.
  • Mix topping ingredients together and put a bit on top of each muffin.
  • Bake at 375 F for about 20 minutes or until lightly browned.
