Rhubarb Muffins

- 1 1/2 cups brown sugar shopping list
- 1/4 cup oil shopping list
- 1 egg shopping list
- 2 teaspoons vanilla shopping list
- 1 cup buttermilk shopping list
- 1 1/2 cups chopped rhubarb shopping list
- 2 1/2 cups flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- Topping: shopping list
- 1/3 cup white sugar shopping list
- 1 1/2 teaspoons cinnamon shopping list
- 1 tablespoon melted margarine shopping list
How to make it
- Combine the sugar, oil, egg and vanilla.
- Beat until well blended and then stir in the buttermilk and rhubarb.
- Add the dry ingredients and stir until just moistened - don't overmix or you will get tunnels in the muffins and sharp pointed tops on them.
- Fill greased or lined muffin tins 2/3 full.
- Mix topping ingredients together and put a bit on top of each muffin.
- Bake at 375 F for about 20 minutes or until lightly browned.
