Black Bean Soup Recipe

Ingredients

2 cans black beans

2 med onions, chopped

3 cloves of garlic, chopped

1 tbsp olive oil

2 tbsp chili powder

1 tsp hot pepper sauce (or more if you're like me)

1 jalapeno, chopped

2 tsp oregano

1 1/2 tsp cumin

1 1/2 tsp fennel seed

5 cups vegetable stock

28 oz stewed tomatoes

4 tsp lime juice

salt and pepper to taste

Directions

Saute all the spices, onions and garlic together until onions are soft.

Add everything else but the lime juice and cook together over med high heat until boiling.

Puree soup in blender. (If you like a more chunky soup, only puree half.)

Add lime juice.

Serve with yogurt (or sour cream), cheese and homemade fry bread or tortilla chips.
