Black Bean Soup

- 2 cans black beans shopping list
- 2 med onions, chopped shopping list
- 3 cloves of garlic, chopped shopping list
- 1 tbsp olive oil shopping list
- 2 tbsp chili powder shopping list
- 1 tsp hot pepper sauce (or more if you're like me) shopping list
- 1 jalapeno, chopped shopping list
- 2 tsp oregano shopping list
- 1 1/2 tsp cumin shopping list
- 1 1/2 tsp fennel seed shopping list
- 5 cups vegetable stock shopping list
- 28 oz stewed tomatoes shopping list
- 4 tsp lime juice shopping list
- salt and pepper to taste shopping list
How to make it
- Saute all the spices, onions and garlic together until onions are soft.
- Add everything else but the lime juice and cook together over med high heat until boiling.
- Puree soup in blender. (If you like a more chunky soup, only puree half.)
- Add lime juice.
- Serve with yogurt (or sour cream), cheese and homemade fry bread or tortilla chips.
- Enjoy!
