Custard Pie

- Pastry for a single 9 inch pie pan shopping list
- 4 eggs, beaten shopping list
- 3/4 cup granulated sugar shopping list
- a pinch of salt shopping list
- 1 teaspoon pure vanilla extract shopping list
- 1 egg white, gently whisked shopping list
- 2-1/2 cups whole milk, scalded shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1 drop of yellow food coloring (optional) shopping list
- For a more intense yellow color, add a drop of yellow food coloring. shopping list
How to make it
- Preheat oven to 400 degrees F (205 degrees C).
- Mix eggs, sugar, salt and vanilla together.
- Stir well.
- Blend in the scalded milk.
- Line pie pan with pastry and brush inside bottom and sides of shell with gently beaten egg white to help prevent a wet crust.
- Pour custard mixture into pie shell.
- Sprinkle with nutmeg.
- Bake in a preheated 400 degree oven for 30 to 35 minutes or until a knife inserted in the center comes out clean.
- Cool on rack.
