Orchard Fruit Bread

- 3c. all-purpose flour shopping list
- 2/3c. sugar shopping list
- 1tsp. baking soda shopping list
- 2 eggs, beaten shopping list
- 8oz. lemon lowfat yogurt shopping list
- 1/3c. vegetable oil shopping list
- 1tsp. grated lemon zest shopping list
- 15oz. can Del Monte lite fruit cocktail, drained shopping list
- 1/2c. finely chopped pecans or walnuts shopping list
How to make it
- Preheat oven to 350F. Combine flour, sugar and baking soda; mix well.
- Blend eggs with yogurt, oil and lemon zest. Add dry ingredients along with fruit cocktail and nuts; stir just enough to blend. Spoon into greased 9x5 inch loaf pan.
- Bake 65 minutes or until wooden pick inserted into center comes out clean. Let stand in pan 10 minutes. Turn out onto wire rack; cool completely.
