- Tropical banana Fritters shopping list
- 100 g/4 oz/1 cup desiccated (shredded) coconut shopping list
- 2 bananas, mashed shopping list
- 75 g/3 oz dark brown sugar shopping list
- Finely grated rind of 1 lime shopping list
- 30 ml/2 tbsp dark rum shopping list
- 1.5 ml baking powder shopping list
- oil, for deep-frying shopping list
- Fluffy Boozy Cream Topping shopping list
- 1 egg white shopping list
- 300 ml double (heavy) cream shopping list
- 15 ml/1 tbsp brandy, rum or sherry shopping list
- 25 g/1 oz/2 tbsp light brown sugar shopping list
How to make it
- Tropical Banana Fritters
- Reserve 25 g/1 oz of the coconut and put the remainder in a bowl with the mashed bananas, sugar, lime rind, rum and baking powder.
- Mix thoroughly. Shape into small balls and roll in the remaining coconut.
- Deep-fry in hot oil for about 3 minutes until golden brown.
- Drain on kitchen paper (paper towels) and serve hot with Fluffy Boozy Cream Topping.
- Fluffy Boozy Cream Topping
- Whisk the egg white until stiff.
- Whip the cream with the brandy, rum or sherry and sugar until thick but not stiff.
- Fold the egg white into the cream mixture. Pour into a small jug and serve.
