GOURMET DELI TURKEY WRAPS AND CONVERTIONS FOR DIABETICS

- Ingredients: shopping list
- 2 Tbs. water shopping list
- 2 Tbs. red wine vinegar shopping list
- 1 Tbs. Crisco extra virgin olive oil or canola oil shopping list
- 1/8 tsp. pepper shopping list
- ¾ pound sliced deli turkey ( Diabetics use Lean reduced-fat ) shopping list
- 6 flour tortillas ( 8-inches ), room temperature ( Diabetics use use Whole Wheat ) shopping list
- 4 cups spring mix salad greens shopping list
- 2 medium pears, peeled and sliced shopping list
- 6 Tbs. crumbled blue cheese ( Diabetics to make lighter use 3Tbs. Blue with 3Tbs 1/3 less fat cream cheese ) shopping list
- 6 Tbs. dried cranberries shopping list
- ¼ cup chopped walnuts shopping list
How to make it
- In a jar with a tight-fitting lid combine the water, vinegar, oil and pepper; shake well.
- Divide turkey among tortillas; top with salad greens, pears, cheese, cranberries and walnuts. Drizzle with dressing. Roll up tightly. Secure with toothpicks. Serve immediately. Yields: 6 servings.
